Mashed Potato Casserole

Mashed potatoes get gussied up in this easy to make recipe. Bits of chopped sauteed vegetables enhance your choice of russet or red potatoes. Quickly prepare and pop in the oven to finish while getting the rest of your meal ready. Ingredients 4 medium russet or red potatoes (cut into quarters) 2 tablespoons butter 2 tablespoons extra-virgin olive oil (divided) 2 to 4 tablespoons milk 1 small onion (finely chopped) 1 large stalk celery (finely chopped) 1/2 cup red pepper (finely chopped) sea salt (to taste) white pepper (to taste) 2 tablespoons freshly grated Fulvi Romano Cheese (optional) paprika (as garnish) Directions 1. Baked Chicken and Rice

Nice healthy dish that is tasty too! Serves 8-10 Ingredients 2 cups long grain rice 3 cloves garlic; minced 1 can cream of mushroom soup 1 tablespoon worcestershire sauce 1 can cream of chicken soup 2 Cans water 1 cup sour cream 8-10 pieces chicken 1 small onion; diced 2 teaspoons poultry seasoning 1 stalk celery; diced to taste salt and pepper Directions 1. To a 12″ Dutch oven add rice, soups, sour cream, onion, celery, garlic, worcestershire, and water. Stir to mix. 2. Season chicken with poultry seasoning and salt and pepper then place over top of rice mixture. 3. Cover Dutch oven and bake using 10-12 briquettes bottom and 14-16 briquettes top for 90 minutes.
