Eagle Squat Salsa

Ingredients 5lb heirloom or garden fresh tomatoes 4 cloves garlic 2 bunches green onions 1 medium red onion 1 bunch cilantro 2 medium jalapenos 1 medium red pepper 1 medium green pepper 2 medium limes 1 tablespoon kosher salt 1 teaspoon cumin Directions Step 1 Dice the tomatoes, red onion, jalapenos and peppers. Step 2 Mince garlic cloves and chop the green onions and cilantro. Step 3 Mix all the ingredients, adding the juice of the two limes and cumin. Salt to taste. (store in refrigerator)
