Spring Chicken & Snow Pea Salad

Thinly sliced, crunchy snow peas, combined with a creamy Asian dressing, makes a delicious, and healthy, sweet spring salad. Ingredients 1lb boneless, skinless chicken breast, trimmed 14 oz. cans reduced-sodium chicken broth 3 tablespoons rice vinegar 3 tablespoons reduced-sodium soy sauce 3 teaspoons toasted sesame oil 2 tablespoons tahini, or cashew butter 1 tablespoon fresh ginger (minced) 2 cloves garlic (minced) 1lb snow peas (trimmed and thinly slivered lengthwise) 2 tablespoons chopped cashews Directions Step 1 Place chicken in a medium skillet or saucepan and add broth; bring to a boil. Serves 8 Ingredients 3 teaspoons Vegetable oil 1/4 white wine vinegar 2 tablespoons lemon juice 2 teaspoons Worcestershire sauce 1/4 teaspoon black pepper 6 cups raw chopped vegetables (Choose or add some of your favorites. scallions, broccoli florets, halved cherry tomatoes, asparagus, snow pea pods, cucumber slices, olives, mushrooms, or peppers. (Blanch if desired)) 8oz dry corkscrew pasta (cooked al dente) 1 clove garlic (minced) 2 teaspoons Dijon mustard 1/2 salt Directions 1.
