Summer Pasta Salad | Carson Tahoe Health

Serves 8

3 teaspoons Vegetable oil
1/4 white wine vinegar
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
1/4 teaspoon black pepper
6 cups raw chopped vegetables (Choose or add some of your favorites. scallions, broccoli florets, halved cherry tomatoes, asparagus, snow pea pods, cucumber slices, olives, mushrooms, or peppers. (Blanch if desired))
8oz dry corkscrew pasta (cooked al dente)
1 clove garlic (minced)
2 teaspoons Dijon mustard
1/2 salt

1. Whisk together oil, vinegar, garlic, lemon juice, mustard, Worcestershire sauce, salt, and pepper.
2. Pour dressing over hot pasta in a large bowl. Toss to coat. Mix in vegetables. Chill before serving.
