Ingredients
1 teaspoon olive or canola oil
8oz reduced-fat smoked turkey sausage (quartered lengthwise and cut into 1/4-inch pieces)
1 teaspoon olive or canola oil
1 large red bell pepper, chopped
1 medium onion, chopped
1 medium carrot, thinly sliced
2 cups hot cooked brown rice (cooked without salt or margarine in fat-free-sodium chicken broth)
7.75oz can no-salt-added kidney beans ( rinsed and drained)
1/2 cup at-free, low-sodium chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
Directions
Step 1
Heat the oil in a large nonstick skillet over medium-high heat, swirling to coat the bottom.
Step 2
Cook the sausage for 2 minutes, or until browned, stirring frequently. Transfer to a plate and set aside.
Step 3
Pour the remaining oil into the skillet, swirling to coat the bottom.
Step 4
Cook the bell pepper, onion, and carrot for 4 minutes, or until the onion is soft, stirring frequently.
Step 5
Stir in the cooked rice, browned sausage, and remaining ingredients, Cook for 1 to 2 minutes, or until heated through.
