Egg Breakfast Baskets
Looking for a quick, easy breakfast? Whether you are cooking for two, or for ten, this breakfast basket eliminates the multiple steps of frying an egg, toasting the bread, cleaning the pan, and combining the different ingredients. Instead, add them all together into one simple process in the oven. You can even incorporate shredded cheese on top of the egg to complete your well-balanced breakfast.

4 slices of soft, 100% whole-wheat sandwich bread
4 large eggs
1/2-tsp. kosher salt
1/4-tsp. black pepper
Preheat oven to 400F. Spray four 1-cup ramekins with cooking spray and place them on a baking sheet.
Place each slice of bread inside a ramekin, pressing gently to tuck it inside the ramekin to make a breadbasket. Spray the slices with a little more cooking spray. Break an egg into each breadbasket.
Bake for 20 minutes until eggs are set. Gently release from the ramekins and serve topped with salt, pepper and paprika.
