Eagle Squat Salsa

By Glen Eagle’s own Chef John Ammerman Salsa World Championship winner 2006. Ingredients 5lb heirloom or garden fresh tomatoes 4 cloves garlic 2 bunches green onions 1 medium red onion 1 bunch cilantro 2 medium jalapenos 1 medium red pepper 1 medium green pepper 2 medium limes 1 tablespoon kosher salt 1 teaspoon cumin Directions Step 1 Dice the tomatoes, red onion, jalapenos and peppers. Step 2 Mince garlic cloves and chop the green onions and cilantro. Step 3 Mix all the ingredients, adding the juice of the two limes and cumin. Salt to taste. (store in refrigerator)


Broccoli & Tomato Pasta

Serves 8 Ingredients 2 cloves garlic (minced) 2 tablespoons olive oil 2 cups broccoli florets 1 cup condensed chicken broth 1 cup dry white wine 24 sun-dried tomato halves (cut into strips) 1 teaspoon dried basil 1/2 teaspoon dried oregano 1/2 teaspoon Dried thyme 1/2 teaspoon dried marjoram 12oz dry pasta (cooked al dente) Directions Step 1 Saute garlic in oil in a large saucepan over medium heat for 1 minute. Add broccoli and saute 2 minutes. Add broth and wine and bring to a boil. Stir in tomatoes, basil, oregano, thyme, and marjoram. A dish of tender roasted medley of gourmet veggies.
