Red, White & Blueschetta

Here’s a red, white, and blue snack to keep you in the patriotic spirit! This yummy twist on a classic bruschetta appetizer is easy to make and requires just four simple ingredients: toasted whole-grain bread, feta cheese, blueberries, and grape tomatoes. You’ll need to let the mixture sit in the fridge for about a half hour before serving to give the sweetness of the berries time to blend with the acid of the tomatoes and the salty flavor of the feta cheese. Then, simply spoon the mixture on to toasted whole grain bread and serve.

Ingredients
• whole-grain bread, sliced and toasted
• feta cheese
• blueberries
• grape tomatoes

Directions
Cut the tomatoes in half and combine the three ingredients in a bowl and store in the fridge for a half hour. The acid from the tomatoes will combine with the blueberries and feta to create a sweet, salty, and savory snack your guests will love. Spoon the mixture on the toasted bread and serve.
