Serves 24 (2 inch) bars

2 cups old fashioned oats
1 cup whole wheat flour
3/4 cups raisins or dried mixed berries (optional)
1/2 cup packed brown sugar
1/2 cup ground flaxseed
3/4 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 cup honey
1/2 cup peanut butter
2 teaspoons vanilla extract
1 large egg (beaten)

1. Preheat oven to 350 degrees and generously coat a 13 x 9-inch baking pan with non-stick cooking spray.
2. Stir together oats, flour, dried fruit, brown sugar, flaxseed, cinnamon and salt in a large bowl.
3. Add remaining ingredients and mix well using your hands.
4. Press mixture evenly into prepared pan and bake for 20 minutes or until bars are lightly browned on the edges. Cool for 5 minutes before cutting. (Do not allow bars to cool completely before cutting)
