The Perfect Holiday Dish!

Ingredients
3 medium sweet potatoes (about 5 oz. each)
20oz crushed pineapple ( in it’s own juice, drained of juice except for ¼ cup)
1 tablespoon melted butter
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
season to taste salt and fresh-ground black pepper
Directions
1. Preheat oven to 400 degrees F.
2. Prick surface of sweet potatoes with a fork.
3. Place sweet potatoes directly on oven rack with a foil-lined baking sheet placed on the rack directly below it.
4. Roast sweet potatoes for about 45 minutes or until fork tender.
5. Remove sweet potatoes from oven, and set aside until cool enough to handle. Scoop flesh from sweet potatoes, discarding the skin. Add the flesh to a large bowl. Add remaining ingredients and mash well. 3. Place sweet potato mixture into a 4-cup casserole dish, and bake at 400 degrees F. for 20 minutes or until bubbly and lightly browned.
